White Chocolate, Coconut, Lime and Macadamia cookies
2 sticks butter (either all infused on 1 stick infused, 1 stick not)
3/4 c white granulated sugar
1/3 c brown sugar
2 eggs
1 t vanilla extract
2 t lime zest
1 T lime juice (I used bottled key lime juice)
2 ¼ c flour
½ t baking soda
½ t baking powder
¼ t salt
12 oz white chocolate chips
1 cup chopped macadamia nuts
1 c shredded sweetened coconut
Preheat oven to 350 F. Line cookie sheets with parchment and set aside.
Cream together butter and sugars until smooth and fluffy. Add eggs, vanilla, lime zest and lime juice.
Mix thoroughly.
Combine flour, baking soda, baking powder and salt and add to creamed buƩer and sugar mixture. Beat
unƟl well blended.
Mix in chocolate chips, coconut and nuts by hand.
Drop round tablespoons on parchment lined cookie sheets. Bake for 10-12 minutes or unƟl lightly
browned. Cool completely before storing in airtight container.
