Thanks for stopping by todayto talk about my groovy granola bars Oh, and did i mention they are no bake? Perfect for the steamy summer days when you don’t want to turn on the stove let alone of the oven.i made these using peanut butter chopped honey roast peanuts and dried cherries, but feel free to use any seed or nut butter mix ins of your choice. Just think of the possibilies ….white chocolate with dried raspberries and macadamia nuts. Or how about Pistashio butter with dried cranberries , and even more , coconut and minichoclate chips.
The ganache swirl is entierly optional but opens more decorative options. Think about making these fot the next big game party. You could make the ganache with the colored candy melts in the teams colors. Or a baby shower reveal use pink or blue candy melts.

Groovy Granola Bar Recipe
1/2 c infused butter
1/2 c infused sugar
1/2c honey1c peanut butter
2 1/2 c old fashioned oats
2 t vanilla extract
1/2 t salt2c crispy rice cereal
1 1/2 c chopped nuts , dried fruit and / or chocolate chips
Extra nuts for topping
Ganache topping
4 Oz chopped chocolate
1/4 c infused heavy cream
1T infused butter
Prepare 9×13 pan with parchment that over hangs the side of the pan to make removing the bars easier.Set aside.
Cream butter and sugar together. Add honey and mix again. Add peanut butter , vanilla salt, and continued to mix until fully combined scraping down the bowlserval times.
Add oats to the bowl and mix thoroughly . Add the chopped nuts and fruits and chocolate chipsuntil combined.
Finally add the the crispy rice cereal and mix by hand , pat into the pan. Top with another layer of parchment and refrigerate until firm
Make gananch by heating all ingrediants gently in a double boiler unit smooth. Swirl overthr pan of bars. Once the ganache is set, cut into bars, and store individually wrapped in the refrigerator.
As with all cannabis infused good start with a small serving till you learn your tolerance level.
