Now I’m jonesing for fresh fruit and veggies to make cold chilled soups

Thanks for stopping by today to talk about this variation on a popular soup. Usually made with broccoli and chedder cheese, but I decided to use  pepper jack cheese in the soup today No reason other than I didn’t have chedder cheese, but I did have pepper jack chese.cheese.

I usually  think hot creamy soups is a winter time fare …with the temperature onlyi in the mid-40s rs May it’s already. I  decided that this  could be the  last  hurrah  for hot soup this year . Strange weather…. I had chive flowers at the same time thats why I used them as garnishment.

Now I’m jonesing for fresh fruit and veggie of the summer to make cold chilled soups. I’ve started a ton of veggie in the new raised beds this year. I know it will be least a month or two before I harvest anything , but I’m really impatient . I see lots of farmer’s markets in my future.

Jacked Cheese and Broccoli soup.

2 T Olive oil

1 pkg. ( 10 – 12.oz )

1 fresh Broccoli crown decided

1 diced yellow onion

2 stalks celery diced

2 cloves of garlic .inced

1 ( 10 – 12  oz )russet potato , pealed and diced

1 t salt

1/2  t ground black pepper

4 c chicken  or veggie broth

1 c infused cream

1%2 c milk

8 o? Shredded pepper jack cheese

Dash of cayenne pepper

Pinch of red pepper flakes

Optional for serving :crumbled bacon, broccoli florets, chives ( and additional chive flower additional cheese and / or  cheese or croutons

Heat large pot or Dutch oven over medium heat Dd olive oil  onion , celery. Are saut until onions and celery are softened, approximately 5 minutes.

While onions and celery are sautéing trim fresh broccoli crown into small florets  trim  tough ends from Broccoli stalk . And  thinly slice the stalk. Add the stalks to the o ion and  celery. Mixture. Lightly steam the broccoli florets ( in the microwave es) and set aside.

Add the chicken or veggie stock and frozen  broccoli to the pot Simmer until vegables are completely  cooked approximately 15 minutes.

Blend the soup with an immersion blender ot in batches in a normal blender until smooth. Return soupto pot. Stir in cayenne  pepper flakes   ream milk and steamed broccoli florets. Return pot to .medium low heat until just warmed through. Re.ove pot from heat a d stir in cheese until melted

Serve immediately with any and all garnishment.

As with all cannabis infused food start with small serving until you learn tolleren e le El. Keep out if reach of children
