Thanks for stopping by today to talk about this creamed spinach casserole. I absolutely loved
Stouffers frozen spinach souffle, even though it wasn’t very ‘souffle-y’ in the classic French puffy
style, but it sure was yummy. Unfortunately, I haven’t been able to find the Stouffer’s version at my
local mega -mart recently. I tried to recreate the taste from memory, so If you are a fan of the
Stouffers version, let me know what you think of my rendition.
Some spinach fun facts for you: it is believed that spinach was first cultivated over 2000 years ago
in Persia or what is to day Iran. The association of spinach with the Italian city of Florence is
attributed to Cather de Medici’s love of the green. Spinach can neutralize certain explosives such
as TNT. A study by the Pacific Northwest National Laboratory found that nitoreductase, a naturally
occurring enzyme in spinach ‘eats’ the TNT to neutralize it. Renaissance painters used the green
pigment from spinach as a paint. Crystal City Texas is the spinach capital of the world.
No discourse on spinach would be complete without the mention of Popeye, the world ambassador
of the green. Popeye is credited with promoting the consumption of spinach among children
especially during the great depression, when it was more easily obtained than other food products.
While not directly attributing Popeye’s strength to the iron in spinach, it was strongly suggested in
the comic. As it turns out, however, a decimal point mistake during the 1800’s greatly overstated
the iron content of spinach.
Cannabis Creamed Spinach Casserole Recipe
1 c infused heavy cream
3 eggs
1 pkg frozen chopped spinach (10-12 ounces), thawed and squeezed dry
½ c shredded parmesan cheese
2 T flour
1 t onion powder
1 t dried dill
½ t salt
¼ t ground nutmeg
½ t black pepper
1/8 t cayenne pepper
Preheat oven to 350 degrees F. Butter and set aside 8×8 baking dish.
In a large bowl, whisk cream and eggs for 2-3 minutes or until slightly frothy.
Add the remaining ingredients and mix well. Pour into prepared dish.
Bake for 30-35 minutes or until center is set
