Cannabis and Cheese Wafer Story

Hello Everyone!
Thanks for stopping by today to talk about these cannabis and cheese wafers. They’re kind of a cross between a snack cracker and a cookie. I know savory and cookie don’t usually go together, but this is one of the times that they do. (Honey and Rosemary Shortbread cookies are another example of sweet and savory working together…stay tuned for this recipe in the future). I have been enjoying the wafers with a glass of wine on the back porch once the sun goes down and its cool enough to be outside.
I have also made these wafers as one giant wafer (just press dough into single, thin layer on a prepared baking sheet), then cut out circles or other shapes with a cookie cutter once the pan comes out of the oven. The orange tone of the wafer plays perfectly as a pumpkin for Halloween.
You can also use other cheeses in the wafers. Just make sure they have a similar melting texture as the cheddar or swiss. For example, I wouldn’t use parmesan, since it doesn’t have the same melt-abiity. I have used gouda, american, quesadilla, emmentaler or fontina. You wouldn’t offend me if you added some finely chopped thyme, bacon or rosemary to the recipe.
