T-H-C (Toffee, Honey & Cannabis) Bar Story
Hello Everyone,
Thanks for stopping by today to talk about these unique cookie bars. I started developing this recipe with the name, which is opposite of the way I normally start a recipe. I knew I wanted to use this title, so it was a matter of finding and combining ingredients to match the title. A little kooky, I know, but sometimes you need to take drastic actions.
I wrote the recipe with three different infusions – butter, sugar and honey. If you use all three infusions, the bars will be very potent. You can always only use one or two of the infusions, or use half the amount of each infused ingredient and supplement with uninfused versions of the ingredient. Sorry if that was a Mr. Obvious statement, but I have recently been informed that sometimes I don’t explain techniques adequately; not everyone reads cook books for pleasure or watches hours of cooking shows like I do.
This recipe can be made completely by hand. I didn’t even break out my hand mixer, let alone the big Kitchen Aid stand mixer. Having the butter melted, not just at room temperature, means no creaming of butter and sugar, which is usually the only part of the cookie making process that needs mechanical assistance, in my humble opinion.
I used pecans to top the bars, but I think cherries and almonds are a match made in heaven, and would suggest almonds if you don’t have or don’t like pecans.

T-H-C (Toffee, Honey & Cannabis) Bars
2 1/2 c all-purpose flour
4 oz infused butter, melted½ t salt
1 ½ t baking soda
1 ½ t vanilla extract or paste
1 c canna sugar
¼ c infused honey
1 egg
1 pkg toffee bits (approx. 6 oz), divided
6 oz chocolate chips, divided
4 oz dried tart cherries
¾ c chopped, toasted pecans
Preheat oven to 350 degrees F. Spray 9×13 pan with cooking spray or butter and set aside.
In large bowl, combine flour, salt, baking soda and sugar.
In another bowl, combine melted butter, honey, egg, and vanilla. Whisk to combine then add to dry ingredients and mix until just combined.
Stir in cherries and most of the toffee and chocolate chips. Save a tablespoon or two of each to scatter over the top of the bars immediately after they come out of the oven.
Spread batter into prepared pan and place in the preheated oven. Bake for 25-30 minutes or until bars are set and tester comes out clean.
Sprinkle the bars, before cutting, with the reserved toffee and chocolate chips as well as the pecans. The toffee and chocolate will melt slightly and hold the pecans in place. Cool completely in pan. Cut into bars and store in an airtight container for up to 5 days
Start with a small serving till you learn your tolerance level. Keep out of reach with children and pets.
