Ganja & Gnocchi Sheet Pan Story

Hello Everyone!
Thanks for stopping by today to talk about a simple, weeknight pasta dish. My new favorite pasta is gnocchi; although you can make the case that gnocchi isn’t a true pasta since it contains things like potato and ricotta that aren’t in a traditional pasta. You can make your own gnocchi, but I really prefer this recipe with sturdier, commercially prepared gnocchi.
Since gnocchi is a heavy pasta, I wanted a light sauce to go with it, but something more than a traditional brown butter sauce. How about a fresh, deconstructed Bolognese? I kept this one very simple, but you could add any other vegetables you have – carrots, zucchini, mushrooms or fennel come to mind. Other proteins could be added to the sausage (or even replace it), such as pancetta, bacon or ground beef or turkey.

A green salad (with infused dressing and croutons of course), would complete this meal that can be on the table in well under an hour! I’ll be sharing an infused ranch and an infused homey mustard dressings as well as an infused crouton recipe soon, so stay tuned! I developed the dressing and crouton recipes for my brother’s wedding, which, thankfully, is now over an things can get back to ‘normal’…..whatever that is!
8 oz mild Italian sausage
12 oz prepared gnocchi
2 c (total) red, green or orange bell pepper strips
1 onion, cut into 10 wedges
5 large cloves garlic
21/2 c cherry tomatoes
3 sprigs fresh h thyme
3 sprigs fresh rosemary
2 t dried Italian seasoning
¼ c fresh shredded basil
1/3 c infused olive oil, divided
Preheat oven to 400 F. On a large, rimmed baking sheet, divide sausage into about 24 small meatballs. Add unpeeled garlic cloves to pan. Place in preheated oven for 7 minutes.
While sausage is cooking, add gnocchi to pan of barely simmering, salted water. Cook for 2 minutes, drain.
Add gnocchi, peppers, fresh thyme, fresh rosemary, dried Italian seasoning and 2 T infused oil. Stir contents of the pan and return the pan to oven. Lower oven temperature to 350 F and cook for 10 minutes.
Remove pan from oven, add cherry tomatoes and remaining olive oil. Cook for an additional 5 to 10 minutes, or until cherry tomatoes burst . As always with cannabis infused food start with small servings till you learn your tolerance level. Keep out of reach of Children and pets.
