
Cannabis & Couscous Tabbouleh Story
Hello Everyone,
Thanks for stopping to talk about Tabbouleh, my way. I apologize in advance to tabbouleh traditionalists; this recipe is quite a shake up. This is another one of my wedding reception try outs. My brother’s wedding, not mine. Feel free to refresh yourself on my entire rant about the wedding in the curry meatball story. Don’t get me wrong, I love my brother and want to do this for him, but I need some guidance from him & Teresa. All that has been determined to this point is that one of the wedding colors will be purple! At least I wasn’t tasked with creating infused AND purple food.
I’m a firm believer that cilantro improves most green sauces or relishes, so I added some here. If you don’t share my passion for cilantro, feel free to use all parsley as in a more traditional Tabbouleh. Shallots and cucumbers are also non-traditional ingredients that could be omitted, but I would encourage you not to.
Fun food Fact #137, Tabbouleh or Tabouli, is believed to have been eaten in the Levant region of Lebanon and Syria over 4,000 years ago. Lebanon even has a national day of celebration in honor of Tabbouleh! In case you want to celebrate, it’s the first Saturday in July every year.
If you dress the couscous while it is still slightly warm, it will absorb a lot of the flavor of the dressing and leave the salad somewhat dry. Just splash on a little extra lemon and olive oil to get the consistency you like.
Cannabis & Couscous Tabbouleh Recipe
2 cups prepared couscous
1 c chopped parsley (either flat or curly will work here)
1 c chopped cilantro
1/3 c chopped mint leaves
¼ c finely diced shallots
¼ c finely diced scallions
1 c quartered cherry tomatoes
½ c diced and seeded English cucumber
Zest and juice of 2 large lemons
½ c infused olive oil
Salt and pepper to taste
In a large bowl, combine all ingredients. Can be served immediately or refrigerate, covered for several hours.
As always with cannabis food start with a small portion till you learn your tolerance level. Keep out of reach of children and pets.
