



Brownie & Bud Parfait Story

Thanks for stopping by today to talk about a classic, beautifully layered dessert, made my way, namely with lots of cannabis stuffed into the recipe. The parfait is just an assembly job once you get the components made, which can all be done a few days in advance.
If blueberries aren’t your thing, just about any berry can be used for the compote (just a fancy name for fruit cooked with sugar and left chunky). The parfait is also excellent with cherries or for a winter version with apples or pears.
I used a water soluble THC powder for the infusion in the compote. I don’t usually like to use a product like this since not everyone has access to a dispensary, but for those of you who do, this is the way to go. I have also made the compote with infused canna-sugar, but be extremely careful to remove the compote from the stove the minute the sugar is melted to avoid degrading the THC. Also get it out of the saucepot immediately for the same reason. If you have some green dragon infusion around, this can be used to infuse the compote, as long as you don’t mind the burn of the alcohol.
The individual components of the dish can be enjoyed singly as well. For example, the blueberry compote mixed with about ¼ cup of maple syrup makes a great pancake, waffle or ice cream topping. Of course, the brownies are excellent on their own or make a Sundae with ice cream, chocolate and/or caramel sauce, whipped cream, nuts and a cherry. The seed and nut crumble can be enjoyed on its own as a snack, great to take on outdoor adventures.



Brownie and Bud Parfait
Prepared brownies ( I used a box mix and buzzed it up by making with infused sunflower oil), cut into small cubes
8-10 ounces plain, vanilla or honey Greek yogurt
½ c infused blueberry compote, (recipe to follow)
½ c seed and nut crunch B(recipe to follow) or purchased granola
1 c small diced mixed fruit of your choice (strawberries, raspberries, blackberries and kiwi are nice)
½ c slightly sweetened whipped cream, optional
Mint sprigs for garnish, optional
Layer ingredients in large, clear drinking glass or mason jar for individual servings or in a large trifle bowl for a family style dessert.
Infused Blueberry Compote
1 lb blueberries, divided
¼ c water
½ cup sugar
2 T lemon juice
1or 2 bay leaves
30 mg THC instant dissolve powder
Place ¾ of blueberries in medium saucepan with water, sugar, lemon juice and bay leaf. Bring to a boil and simmer for 15 minutes, until most of berries have burst. Remove from heat and add remaining berries and THC powder. Cool to room temperature and store in refrigerator until ready to assemble the parfait.
Seed and Nut Crunch
3 1/2 cups (total) nuts and seeds (I used walnuts, pecans, almonds, sesame seeds and hemp seeds) Chia seeds and flax seeds are also nice
2 egg whites
2 t cinnamon
1 t cardamom
1 t infused salt
¼ t cayenne pepper
¾ c infused sugar
Preheat oven to 350 degrees. Line a large, rimmed baking sheet with parchment paper. Set Aside.

In large bowl, combine seeds and nuts. In smaller bowl, whisk egg whites by hand until slightly foamy. Add spices and sugar, mix to combine. Toss with seeds and nuts, stir to make sure all ingredients are well coated.
Spread into a single layer on the prepared baking sheet and bake for approximately 30 minutes. Stir halfway through the cooking time.
Nuts will crunchify on cooling. Once fully cooled, store at room temperature in an air-tight container.
As with all cannabis infused food start with a small portion till you learn your tolerance level. Keep out of reach of pets and children
