Bowled over Honey-Siracha Salmon & Roasted Vegetables Recipe
¾ lb salmon fillet
1/3 c infused honey
2 T siracha
1 T Dijon mustard
1/3 c lime juice, divided
2 t furikake
Salt (infused) and pepper to taste
5 T infused olive oil, divided
1/2 c carrot strips
½ c halved or quartered mushrooms
1/2 c bell pepper, cut into strips (your choice of color)
1/2 c onion wedges
1/2 c sugar snap peas
½ c asparagus
2 c prepared couscous
Preheat oven to 375 degrees. Line large rimmed baking sheet with aluminum foil and spray with cooking spray.
In medium bowl, mix honey, siracha, mustard, 2 T lime juice, furikake and salt & pepper to combine. Reserve half of mixture to thin and make into a dressing.
In large bowl, toss carrot strips, bell pepper strips and mushrooms with 2 T olive oil and salt and pepper to taste. Place on rimmed baking sheet and bake in preheated oven for approximately 12 minutes.
In same bowl, add onion wedges and snap peas with additional oil (if needed). Remove pan from oven and add onions and snap peas to pan. Return pan to oven and roast an additional 10 minutes.
In same bowl toss asparagus with remaining (or another teaspoon or so or oil) and place on pan. Scooch veggies to the sides of pan and place salmon in center of pan. Brush salmon with honey siracha glaze and place pan back into oven for 5 minutes. Reglaze salmon and bake an additional 3-5 minutes or until salmon is cooked to your liking.
While salmon bakes, use reserved glaze, combined with the remaining olive oil and lime juice to make a dressing to drizzle over the bowl. You may need to add additional oil to get a dressing consistency, depending on how much of the 5 T of oil you used on the vegetables.
To assemble the bowl, add 1 cup of couscous to the bowl. Place remaining ingredients on top of the couscous. Sprinkle with additional furikake and green onions if desired.
