Hello Everyone!
Thanks for stopping by today to talk about Rasta Risotto. Although, I guess, I should have come up with a different name for this recipe since Rastafarians don’t eat pork and bacon is the main flavor in this rice. The name was just too cute.
I joke that my husband was Asian in a former life, since he would happily eat rice three times a day everyday. My husband, who typically doesn’t like Italian food, liked this risotto. Now I just have to create a Mexican rice recipe that my husband will eat. Patrick still has childhood trauma around his mom dumping ketchup on white rice and calling it Mexican rice. I think it6’s safe to say we’ll be having more rice in the dinner rotation since we can now have “Italian rice”, not just “asian rice.”
I shied away from Risotto for quite a while, thinking standing at the stove a stirring a pot of rice didn’t sound like a lot of fun to me. It finally dawned on me, however, that I was probably going to be in the kitchen getting the rest of dinner ready, I can take a few minutes to stir some broth into the rice every once in a while. It worked out quite well.

Rasta Risotto
1 ¼ c arborio rice
½ c white wine
8 oz cremini mushrooms
8 oz bacon, sliced crosswise into ½ inch lardons
½ c diced shallot
1 T Italian dried herbs
6 oz frozen green peas
1 c grated parmesan cheese
3 c warmed chicken broth
2 T lemon juice
4 T infused butter
Crisp bacon lardons in large skillet. Remove bacon to paper towel lined plate to drain. Leave bacon fat in pan. Add mushrooms to skillet and Italian herbs to skillet and sauté until mushrooms are tender. Remove mushrooms from skillet and add to plate with bacon.
Add shallot and garlic to skillet and sauté until translucent. Add rice to skillet and stir to coat with remaining fat in skillet. Add white wine and cook and stir until wine is absorbed.
Begin adding broth, 1 ladleful at a time, to rice. Stir until broth is absorbed. Once the first ladle of broth is absorbed add another and stir until absorbed. Continue this process until all but one ladleful is added to the rice.
Add lemon juice to last bit of broth and add and stir it into the rice.
Remove skillet from heat and stir in parmesan cheese and infused butter. As always with infused food start with a small serving till you learn your tolerance level .Keep out of reach of children and pets.
