
Baba Ghanoush Story
Hello Everyone!
Thanks for stopping by today to talk about Baba Ghanoush or Baba Ganouj or muttalbal or
salat hatzilim or caviar d’aubergine or whatever this silky, garlicy eggplant spread is known
as in you corner of the world.
Baba Ghanouch translates to “spoiled daddy” in Arabic. Rumor has it, a member of a long
since forgotten sultan’s harem came up with this recipe to win the sultan’s heart.
Usually, this dip is made with fire roasted eggplant. Since the temperature in my corner of
the world is hovering in the single digits this week, I tried oven roasting the eggplant. You
miss some of the smokey char flavor of the fire roasted eggplant, but I considered it a fair
trade for not freezing while roasting the eggplant.
This spread is great on pita chips (either store bought or homemade), crackers, veggies or
as a spread for sandwiches like gyros or falafel.
Baba Ghanoush Recipe
2 small-medium sized eggplant (about 2 pounds total)
1 T olive oil
¼ c tahini
1/3 c infused olive oil
2 T minced flat leaf parsley
2 small (or 1 large) clove of garlic, pasted
1 T lemon juice
1 t salt
½ t cumin
½ t black pepper
Optional for garnish: additional olive oil, additional minced parsley, paprika, diced red
pepper or pomegranate seeds.
Preheat oven to 450F. line baking sheet with aluminum foil (for easier clean-up). Spray foil
with cooking spray.
Cut eggplants in half lengthwise through stem, leaving stem intact. Rub cut side of
eggplants with 1 T olive oil. Place on prepared sheet pan, cut side down. Roast in
preheated oven for 25-30 minutes. You are looking for the eggplant to collapse in on
themselves, with squishy texture.
When eggplant is cool enough to handle, scoop flesh from eggplant and place in strainer
set over a larger bowl to catch any liquid that drains. Let set 15-30 miuntes.
Add drained eggplant to medium sized bowl. Add remaining ingredients and mix well by
hand. I use a whisk for this process. You may have to break up any long strands of eggplant
with a fork to get the consistency you prefer.
As with all cannabis infused food start with a small serving till you learn your tolerance level. Keep out of reach of children and pets.
