
Italian Potato Puffs Story

Thanks for stopping by today to talk about potato puffs. This recipe started as a way to use up left over mashed potatoes, because if I’m peeling and mashing potatoes, I’m certainly going to make enough to
have some left overs. I won’t lie to you though, I have made the recipe with instant mashed potatoes.
If you make the recipe using a mini muffin tin, it’s a great party appetizer. If you make the recipe using
ramekins or mini-iron skillets, it’s a side dish for dinner. Either way, its delicious!
The Italian-ness from the recipe Ɵtle is due to the use of panceƩa and asiago (or parmesan cheeses). If
you prefer, you can sub in bacon for the pancetta (drain some of the drippings if using bacon, you only
need a tablespoon or two of the drippings). And really, any cheese works…just pick your favorite(s).
Most recently, I made this recipe with cannabutter infused with Hawaiian Bonfire.
Italian Potato Puffs recipe
2 cups mashed potatoes
3 eggs, beaten
1 c shredded asiago or parmesan cheese
4 oz panceƩa, crisped, drippings reserved
¼ cup diced shallots
Salt and pepper to taste
½ c cheddar cheese
For garnish: sour cream, snipped chives or sliced scallions.
Pre heat oven to 400 F. Grease ramekins and set aside. The number of ramekins you need will depend
on the size of the ramekins. I use 6-ounce ramekins and can make 4-5 from this recipe. I have also used
mini cast iron skillets. A regular or mini muffin Ɵn also works.
Make mashed potatoes using your favorite recipe, just sub in cannabutter and or cannacream for infused versions in these ingredients. Cool potatoes to room temperature.
Add beaten eggs, asiago cheese, panceƩa with reserved drippings and shallots. Mix thoroughly. Season
with salt and pepper to taste. You may not need any extra salt or pepper, based on your starƟng mashed
potato recipe.
PorƟon mixture into baking vessel of you choice. Top with shredded cheddar cheese.
Bake in preheated oven for 20-25 minutes (for the ramekins) or until golden brown. Cool for 5 minutes
before serving. You will need to adjust the baking time based on the size of the puffs you are making. A
regular muffin tin will only take a couple of minutes less baking time; mini muffin tins will only take about 12-15 minutes.
Serve warm, garnished if desired. Puffs will deflate upon siƫng.
