Oatmeal Maple Cream Cookies
Cookies
½ c infused butter, room temperature
½ c brown sugar
½ c cannasugar
I egg
1 t vanilla
1 t maple extract
1 c all-purpose flour
½ t baking soda
1 t cinnamon
½ t cardamom
¼ t nutmeg
Pinch of salt
1 2/3 c rolled oats
Filling
½ c butter
¼ c maple syrup
1 ½ c powdered sugar
Pinch of salt
For cookies
With electric mixer, cream together butter and both sugars until light and fluffy. Add egg, vanilla and maple extract. Mix again.
In another bowl, whisk together flour, baking soda, cinnamon, cardamom, nutmeg and salt. Gradually add to creamed sugar and butter mixture and mix until well combined. Stir in rolled oats by hand.

Roll dough into 20 balls. Place balls on parchment paper lined baking sheets about 2 inches apart. (The cookies will spread). Refrigerate the dough balls on the sheets for 30-60 minutes before baking at 325F for 10-11 minutes. The tops of the cookies will still look a little moist; do not overbake.
Cool on sheet pans for 5 minutes before removing to rack to cool completely


For filling
Combine all ingredients in a small bowl with electric mixer.
To Assemble:
Spread the bottom of one cookie with a generous amount of filling. Top with another cookie
