Sweet (POT)ato Casserole Story

Thanks for stopping by today to spend some time talking about another holiday classic – Sweet Potato
Casserole. I say holiday classic, since in my childhood home, sweet potatoes only made an appearance
at Thanksgiving and Christmas. This casserole is not the sweet potato casserole of my childhood.
Does anyone else have nightmares of about the sweet potato casserole coming out of the oven with the
topping of mini marshmallows completely incinerated? In the rush of trying to get everything to the
table at the same time and still have everything be warm, the sweet potato casserole gets put under the
broiler to develop the Beautiful golden-brown patina should be the destiny of every marshmallow in
existence…and no one remembers its in the oven unƟl black smoke starts roiling out of the oven and the
smoke detectors go off….Ah the holiday memories!
This sweet potato casserole has a streusel topping instead of marshmallows. It’s also equally good at
room temperature as it is piping hot from the oven. I have also served it as dessert with a dollop of
whipped cream or a scoop of butter pecan ice cream. I know some of you sweet potato casserole purists
out there can’t imagine the casserole without the mini marshmallows, so, just consider it dessert and try
it!
If you want a more potent elevation from the casserole, you could use cannabuƩer in both the casserole
itself and in the streusel topping. I used non-infused butter in the streusel topping on my version. For
me, the canna-butter and sugar in the casserole itself was strong enough. Also, since the streusel
topping has no protection from the heat of the oven, I wanted to make sure I was not losing any potency
by using the cannabutter in the streusel since the casserole has a fairly long baking time. The blanket of
un-infused streusel protects the infused ingredients in the casserole itself during the longer cooking

Sweet POT(ato) Casserole Recipe
5 medium sweet potatoes (approximately 2 pounds total)
½ c infused butter, softened
¾ c canna sugar
2 eggs
1 t cinnamon
½ t cardamom
½ c milk
Zest and juice of 1 lemon
Pinch of salt
Topping
1 cup chopped pecans
1 c brown sugar
½ c all-purpose flour
¼ c room temperature buƩer
Preheat oven to 400 F. Scrub skins of sweet potatoes and prick with a fork. Bake in preheated oven until
completely soft, approximately 1 hour. When cool enough to handle, peel and place in large mixing bowl.
Lower oven temperature to 350F. Butter 2-quart oven safe baking dish and set aside.
With an electric mixer, beat sweet potatoes, butter and sugar until smooth. Add eggs and remaining
ingredients and mix.
Add sweet potato mixture to prepared baking dish.
For topping: combine all ingredients in small bowl unƟl crumbly. Scatter over the top of the sweet potato
mixture in baking dish.
Bake at 350F for approximately 30-35 minutes.

As always start with small portions till you learn your tolerance to Cannabis infused food. Keep out of reach if children and pets.
