Olive Salad
Hello Everyone,
Thanks for stopping by today to talk about Olive Salad. You could also consider it an amped up
tapenade; mine just has a few extra ingredients than the Traditional olive tapenade.
This olive salad is the defining ingredient (in my mind at least) of my second favorite NOLA sandwich, the
Muffuletta. I mean, what’s not to love about a sandwich that uses an Entire loaf of bread to construct?
The briney-ness of the olive salad cuts through the richness of the meats and cheeses on the sandwich
creating a perfect balance. I’ll share my muffuletta recipe in the future, but, really, once you have made
the olive salad, its only a matter of layering meats and cheeses in a round loaf and topping with the olive
salad. Pressing and refrigerating the sandwich allows all of the infused olive oil to soak into the bread
making for the perfect bite.
A fun fact for you, green olives are said to make men more virile while black olives are said to increase a
woman’s libido. Since this recipe uses a Combination of both black and green olives, it has a little something to spice up everyone’s night life.
While this olive salad is perfect on a Muffuletta, it is equally good on just a crostini or a cracker. You can
also toss it with pasta (like a pesto) for a quick dinner. I have also dolloped onto pizza as a topping.

Olive Salad ingrediants
1 clove garlic
1 T capers, rinsed
¼ c sliced green onion
¼ c giardiniera chopped
2 sweet, pickled cherry peppers, diced
¼ c shredded carrots
1 T minced fresh basil
1 T minced fresh flat leaf parsley
1 t lemon juice
½ t anchovy paste
12 oz jar mixed, piƩed olives, drained
1 6 oz jar marinated arƟchoke hearts, drained
½ c infused olive oil
Salt and pepper to taste
Combine all ingredients except olive oil in food processor bowl. Pulse to combine. I like to leave mine
fairly chunky. Drizzle in olive oil. And pulse to combine.
Refrigerate for several hours to allow flavors to meld.

As always start with a small amount until you are sure about your tolerance of infused food , and keep out if reach with children and pets.
