Chicken and Tortellini Salad
Hello Everyone!
Thanks for stopping by today to spend some time checking out this Chicken and Tortellini Salad. Like
many of my recipes, this recipe is a mash up of what I love and what my husband will tolerate eating.
A litte background….my husband absolutely hates pasta. How can this be, you ask? Apparently, his
mom made such bad macaroni and cheese, it scarred him for life. To this day, at over 65 years old, he
refuses to eat ‘traditional’ macaroni and cheese. So, this love child of a recipe includes some pasta and
cheese for me and enough other flavors and deliciousness that I can actually convince my husband to
eat it.
When I had an office job, we would have “food days” (basically potluck lunches) once a month. I made
the mistake of bringing this unfused salad for one of our food days. After that, I was never able to bring anything
else to food days. It’s that good!
In essence, the dressing for the salad is a homemade ranch….so two recipes for the price of one! Feel
free to add a little more buttermilk for a thinner dressing or add a litte sour cream for a thicker dressing.
The mayo, herb, buttermilk and garlic seasoning mixture alone make a great dip for veggies or chicken
wings. Feel free to bump up the veg factor of the salad by adding things such as sliced celery, bell
pepper, marinated arƟchoke hearts or even defrosted corn kernels if you are feeling parƟcularly in need

Chicken and Tortellini salad
3 c cooked shredded or diced chicken
1 12-15 oz package refrigerated 3 cheese tortellini
1 12 oz bag frozen peas, defrosted
1 carrot, shredded
½ c diced onion
1 c infused mayonnaise
¼ c infused ranch dressing
2 t herb and garlic seasoning
2 t minced (total) fresh, soŌ herbs such as dill, parsley, tarragon, basil
1 15 ½ oz can drained and rinsed cannellini beans
Cook tortellini according to package direcƟons, drain.
Combine all ingredients in large bowl, mix gently to avoid breaking up the tortellini. Refrigerate for
several hours before serving to allow flavors to me

As with all infused. Food start with small amount till you learn your tolerance. Level keep out of reach of pets and children.
