
Pesto Story

Pesto has been one of my favorites for a lot of years. This year I have had a bumper crop of basil in my
garden, so I’ve been Ɵnkering with the recipe throughout the summer. I think I have hit upon the best
combinaƟon of ingredients for this ancient sauce.
For you food nerds like me, here is a short history of how ‘modern day’ pesto evolved. The dish most
closely resembling today’s pesto originated in Genoa Italy someƟme in the 1600’s. The word pesto
derives from the Genoese Italian verb ‘pesta’ which translates to pound or crush. Likely a reference to
the preparaƟon of the sauce in a mortar and pestle.
Pesto can trace its origins back even further than the 1600’s in Genoa. In the first century AD, the
Romans were making a sauce called moretum… again a reference to the mortar and pestle preparaƟon
method. It didn’t have exactly the same ingredients but is thought to be the true origin of pesto.
I have used my pesto to toss with pasta either warm or as part of a pasta salad, spread inside grilled
cheese, sƟrred it into a marinara sauce and mixed with a liƩle mayo (can be infused as well to provide a
double dose of elevaƟon) as a dip for chips or veggies. The sky’s the limit as they say!
As with all edibles, start low and go slow.

Cannabis Infused Pesto Recipe:
Ingredients:
- 2 cups fresh basil leaves
- 1/2 cup cannabis-infused olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 2 cloves garlic
- Salt and pepper to taste
Instructions:
- In a food processor or blender, combine the fresh basil leaves, cannabis-infused olive oil, Parmesan cheese, pine nuts, and garlic cloves.
- Pulse the ingredients until they are well blended and form a smooth paste.
- If desired, add salt and pepper to taste and pulse again to incorporate.
- Transfer the cannabis-infused pesto to a jar or container with a tight-fitting lid.
- Store in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Use the cannabis-infused pesto as a topping for pasta, a spread for sandwiches or as a dip for vegetables.
