
ABC Story
This recipe started as my attempt to “health-ify” my Buckeye Balls recipe. For those of you not from
Ohio or the surrounding states, buckeye balls are peanut butter mixed with an insane amount of
powered sugar and buƩer, then parƟally dipped in chocolate ganache. With a little imaginaon and a lot
of ‘elevation’, these treats do, somewhat, resemble an actual buckeye nut. I’ll share a bar (rather than
ball) version of buckeyes in another post.
The healthiness (yes, I understand this might be an oxymoron when talking about a recipe that still
contains almost a stick of butter and over a cup of sugar) is the better-for-you-fat of almonds and almond
butter as compared to peanut butter, the addition of some fiber with the rolled oats and less chocolate.
These are still very indulgent treats, and you will not miss the butter and sugar I removed from the
original recipe.
As always with edibles, start low and go slow. To many ABC treats and you’ll be hangin’ in the trees with
the squirrels!
Ingredients:
10 oz jar almond butter
6 oz cannabutter
1 ½ c confectionary sugar, sifted
2 c rolled oats
¾ c chopped, toasted almonds
2 t vanilla ½ c dried tart cherries, chopped
½ c mini chocolate chips
In large bowl, cream together the almond butter and the cannabutter with electric mixer. Add the
vanilla.
Add the confectionary sugar, continue mixing until you have a smooth batter. Sieving or sifting the powdered sugar into the batter will cut down on the amount of mixing you need to do to create a
smooth batter.
Add the rolled oats and beat with electric mixer. After the oats have been incorporated, mix in the
remaining ingredients by hand.
Shape into 1 inch balls. Can be rolled in sprinkles or additional chopped almonds for a prettier
presentation.
Store in air tight container in the refrigerator.
