
Ham, Bean & Cheese Spread Story
This is a great recipe if you are not a fan of the flavor of cannabis itself. The bold flavors do a good job of
masking the usual ‘earthiness’ of the infusion. The first time my brother had the infused version, he over-
indulged since he couldn’t detect the tell-tale taste of the cannabis. In his defense, it is his favorite
spread. In my defense, he was told it was very potent.
This recipe is creamy, but with only a small amount of actual mayonnaise, the usual suspect in a creamy
dip. The ground cannellini beans and olive oil provide the bulk of the creaminess for the dip. The
addition of the mayonnaise and oil gives you the opportunity to ‘double infuse’ the spread by using both
infused mayo and oil.
Don’t omit the step of pre-toasting the walnuts. It will make a huge difference in the finished product.
Since this spread isn’t baked or cooked, this is the only chance you have to impart that roasty-toasty
flavor.
This is a very thick spread, so sturdy dippers are recommended. You might consider portioning the
spread by preparing individual crosƟni with a controlled serving size (say a tablespoon or two of spread) on each toast.

Ingredients :
Ham, Bean & Cheese Spread
1 (15.5 oz) can cannellini beans
¾ pound fully cooked cottage ham, chunked
2 T chopped fresh rosemary
3 garlic cloves
½ c infused olive Oil
Juice and zest of 1 lemon
¼ cup infused mayonnaise
8 ounces swiss cheese, finely grated
½c scallions, white and light green parts, seperated
½ c chopped, toasted walnuts
Salt and pepper to taste
Add lemon juice & zest, garlic and rosemary to bowl of food processor. Pulse several times to start the
grinding process. Add the white parts of the green onion and pulse again.
Rince and drain the cannellini beans. Add to food processor along with lemon, garlic, rosemary and
green onions. Pulse several times, then begin to stream in the olive oil. Puree and grind into smooth
paste. Remove mixture from food processor.
Add ham chunks to same processor bowl used for the beans. Pulse several times until until a pebbly
consistency is reached. Add the mayonnaise, swiss cheese, salt, pepper and walnuts. Pulse several
times to combine. Serve garnished with the green tops of the scallions.
